The Rhubarb cake I ate in less than 24 h……. all by myself 🙂
3/4 cake disappeared in few hours….if we are confessing here…. which I think I am 🙂

INGREDIENTS
Preheat oven 400 F
240 g flour
125 g sugar
1 tsp vanilla extract
1/2 tsp salt
1 tsp baking powder
100 g of butter (melted)
2 eggs
1,75 cups of kefir (you can also use sour cream or yogurt BUT not as good)
3-4 cups rhubarb (can substitute with apple or strawberry or blueberry)

Mix the wet ingredients together first and then add dry stuff. Last but not least – rhubarb.
Pour into a baking pan. Put in the oven 400 F for 40-45 minutes.
In all honestly I only had a cupful of kefir so I only did half of the recipe 😉
I am a huge fan of rhubarb. This brings back memories from my childhood….sometimes I wish I could go back for just a little bit and enjoy being a kid again.
