Mini tarts

You know there is some serious baking going on everywhere when there is no flour left in the grocery stores. I got the last bag, I felt so happy 🙂 Never did I ever think getting flour from the store would make so excited 🙂

And I am baking too, more than ever, at least every other day I find something on Facebook, I want to try to make. I have always loved baking, just the eating part is not usually for me unless it´s something really really delicious, like TARTS. I love tarts. This tart recipe is so amazingly easy and you can really use whatever you want for the filling.

Let me share my new favourite recipe 😉



3 cups all purpose flour
1/8 tsp salt
1 1/4 cup powdered sugar
3 egg yolks
2 tsp vanilla extract
2 sticks (226 grams)room temperature butter


Preheat oven to 350F.

In the mixer fitted with a petal attachment beat butter and sugar until smooth. Add vanilla extract, then egg yolks one at a time.

On the low speed, gradually add flour and salt to butter mixture. Mix until it starts to come together. If the dough is too crumbly, add 1tsp milk. Do not overwork the dough. Gather dough together with your hands into a ball.

Some recipes tell you to put it in the fridge for a couple of hours but I find it is easier to work it when you don´t do that.  I don´t have a rolling pin so I worked the dough into the greased muffin tins with my hands. I used 2 different sizes.

If you do have a rolling pin, then of course use it but it´s also fun to work the dough with your hands.  I enjoyed it.

Bake at 350F for 12-14 minutes until golden around the edges.

Let cool for 10-15 minutes before removing tarts from the molds, I used the edge of the knife and they came out very easy.

And the filling is really up to you 😉 I have used meringue, chocolate pudding and coconut pie filling.
