Yesterday was my brothers birthday, he turned 34 and I wanted to celebrate it with a cake or a pie. I decided to make the same pie I made for him when he came to visit me 3 years ago with his family! Good times.
I was surprised I have never posted this recipe before because in one point I made this pie for everyone´s birthday. I have pictures of the finished cakes but I don´t have the step by step pictures. Also, they were not fancy looking pies at all, made super fast and for eating purposes, not for blogging lol If you are a blogger, you know what I mean 🙂
*3 years ago I used raspberries instead of strawberries.
Since I started this pie in the evening, we couldn´t enjoy it yesterday (it needs to be refrigerated at least 6 hours) but we were happy to have a slice today 😉 This pie will never fail you!!! It tastes amazing!!!
Strawberry jello pie
INGREDIENTS
Crust:
1 + ½ package Maria biscuits (I bought the 3 pack one)
⅓ cup butter, melted
*You can also use pre-made Graham cracker crust.
Filling:
1 (85 g.) package strawberry jello
⅔ cup boiling water
½ cup cold water
½ cup ice cubes
250 g Cool Whip topping
2-3 cups fresh strawberries, sliced (depending on your decoration)
INSTRUCTIONS
Slice strawberries. Set aside. Half of them will go inside the filling and half for decorating.
Using a food processor, pulse 1 row of Maria biscuits until crumbly. Mix in melted butter until crust forms. I used the ½ package for the sides.
Press the crust into a 9-inch spring form pan. Set aside until you make the filling.
In a large bowl, add boiling water to jello powder. Stir until completely dissolved, about 2 minutes. Then, add ½ cup cold water and ½ cup ice cubes, stir until gelatin is slightly thickened, about 2 minutes.
Add cool whip topping to gelatin mixture and whisk together until light and fluffy. Stir in sliced strawberries. Refrigerate for 30 minutes or until mixture has thickened.
Add strawberry pie filling to pie crust. Now here is your chance to be creative, I put some Maria cookies on the sides with strawberries (unfortunately I put them in the wrong way but that´s ok. I wanted the Maria name to be outside, oh, well…… ). But you can just pour in the filling, up to you really!
Refrigerate for up to 6 hours or until firm. Top with sliced strawberry.
And then ENJOY!!!!
