Every time I read a murder mystery nowadays I feel like baking cookies (because of the Hannah Swensen books). It´s my mini vacation right now and I went to the library last night, got a whole bunch of murder mysteries, since they are my favourite! Bake Sale Murder by Leslie Meier was on top of the pile 😉
This author is unknown to me, also her mystery series, so the beginning of this book was very slow to me and I am just now starting to get into it. I always need to relate to the main character but this time there wasn´t much to relate to, unfortunately! She has 4 kids and she is much older and living a different kind of life. Although it is taking place in a “Country setting” and has a lot of gossip, that I can relate to lol I really wish she´d added the recipes. I really do!
Anyways I am half way through the book now but I took a little break to bake some cookies. I decided to go with Rice Krispies cookies.
RICE KRISPIES COOKIES
1.5 cups plain yogurt ( I substituted the butter with yogurt)
1 cup brown sugar
1/2 cup white sugar
2 eggs
1 tsp vanilla
1 tsp baking soda
1 tsp baking powder
1 tsp salt
2 cups flour
2 cups quick oats
2 cups Rice Krispy cereal
1 cups chocolate chips
In a mixing bowl, mix together yogurt and sugar until well-blended.
Add eggs and vanilla and mix well. Add dry ingredients to the butter and sugar mixture.
Use 2 teaspoons or an ice-cream scoop to transfer the batter into the baking pan and use the fork to flatten them.
Bake at 350ºF for 12 minutes.
Remove from oven, and let cookies rest on baking sheet/stone until they’re firm enough to move to a cooling rack.
It´s a good snack while reading a book 😉
If you are not trying to loose weight or maintain it, I suggest you use butter instead of yogurt. I ate a lot during the midsummer festivities so there is my reason for not using butter lol
