I bought this very fancy grater the other day. T-Fal Fresh Express. I have never liked grating in my life, but with this, I do fresh salads daily. I grate everything now 🙂 I am so in love with my T-fal. It’s my big help in the kitchen. For the first week I went around and preached to everybody about how good it is. I even got my friend to buy it. I get a lot of use out of it. I hope she does too! Potato muffins are so easy to make with this, just a delight.
POTATO MUFFINS/LATKES
Makes 18 muffins
Preheat oven to 350 F (180 C).
5 yellow potatoes
2 big carrots
1 small yellow onion
1 egg (1 big egg or 2 smalls)
1/2 cup almond flour
salt and spices
Peel and shred potatoes and carrots. Shredding with the T-Fal only takes about 3 minutes. They do say that you should pour out any excessive water from the veggies but I was too lazy and it worked out anyways 😉
I always fry my onions before adding them to any food, but feel free to skip it. I just don’t like raw onions.
Put everything together in a bowl – grated potatoes, carrots, egg, onions, almond flour and salt and spices. Mix well.
Fill your greased muffin tins with the mixture and put it in the oven for 40 minutes or until the tops are browned.
For the side salad I grated beets, carrots and apple and added a couple spoonfuls of Veganese (Vegan mayonnaise) and a bit of salt. It is also my absolute favourite salad. I have made this salad every week now. I mean awesome, as awesome as my potato muffins came out 🙂
