When I was a kid, eating pancakes at my grandmothers house felt like winning a lottery. I now live 6600 km from my grandmother and I always miss her pancakes. I have tried to make them myself but they have never turned out quite like hers. I remember the strong taste of baking powder and I so loved it.
This morning I tried this new recipe and I think next time I will not add any baking powder, just baking soda, this might just be the right recipe for me. I just need to keep on trying.
I have been trying to eat clean, eat organic, and avoiding sugar and bread products. Saturdays is my cheat day so pancakes where definitely on my list! yay!
1 cup whole wheat flour
1 1/2 tablespoons sugar
1 teaspoon baking powder
¼ teaspoon baking soda
½ teaspoon salt
1/4 teaspoon cinnamon
1 cup plain kefir
1 tablespoon coconut oil
1 large egg
1 teaspoon vanilla extract
Mix all the ingredients and fry with butter.
Top with jam, Nutella or maple syrup. They were really good without any topping as well.
