I briefly wrote about this salad on my “Eat this and loose belly fat” post but this salad deserves an entire post on its own because it is so yummy.
3-4 servings and easy to make, just a little bit of chopping to do.
Half a head of iceberg lettuce
3 cups spinach – arugula mix
1 cup baked chicken pieces
1 apple
1 pear
2 tbsp balsamic vinegar
3 tbsp Veganese (or mayonnaise)
3/4 cup plain yogurt
little bit of salt and sugar
Parmesan and walnuts for topping – optional
Prepare your iceberg and spinach/arugula mix by washing and drying and cutting (lettuce). Cut 1 apple and 1 pear into cubes.
Cut baked chicken into cubes. Add to the greens/fruit mix.
Make the sauce – add Veganese (or mayo), yogurt, balsamic vinegar, salt and sugar and mix thoroughly. Pour it on top of greens/fruit and chicken and mix.
I usually package this salad for my lunches for the week. This salad forms a little bit of a liquid in the bottom of each container. So before eating it I just pour it out. It doesn´t mean it´s bad, it comes from all the watery greens and is perfectly normal. Just in case that freaks you out 🙂
I have always been lazy enough to not calculate calories but I would really like to know how many calories might this salad contain per serving.
