Sweet and sour pork with no nightshades

It´s been a while. I was hibernating. When it comes to winter I always tend to just curl up in a ball and do nothing. I have cooked quite a lot of different and interesting meals in the mean time, I just didn’t have the energy to pick up the camera and write about them. Now that I have couple of days off, I´m going to try to fix that! I´m back….or so I think that right now!

If you have read my blog before, you know I have an allergy for peppers and since tomato is in the peppers family, I prefer not to eat too much tomato as well. So here it is, pepper- and tomatoless sweet and sour sauce/marinade. I do use ketchup but it´s made out of beets and carrots. Maiu´s Ketchup. This has actually been my favourite sauce for years now. The most delicious tender pork or chicken is always done with the slow cooker. Also the easiest way!

1 cup brown sugar

3 tablespoons of cornstarch

1/4 cup white vinegar

3 tablespoons soy sauce

1 1/2 cup water

1/4 cup ketchup which I substituted with my home made ketchup

Mix everything together in a slow cooker, water be the last ingredient to add, then add slices of pork or slices of chicken and turn it to low for about 5 hours.

The slow cooker is my best friend, ever since we met 6 years ago 🙂 We have spent countless hours together. My all time favourite is still Coq au vin.

You can serve the meat with whatever you want – rice, potato or just salad.
