I have been experimenting with these morning oat-banana bars for months now and every time I just package them before I could get a good picture. They have turned out awesome every time! Easy to make, and super filling. It´s like morning oatmeal with fruit, only that you can eat it on the go and you don´t need to carry a spoon with you 🙂
I use dried dates or prunes (8-10 pcs), dried cranberries (10-16), 2 frozen bananas, 1 cup of rolled oats (gluten free). Sometimes I add sliced almonds or almond flour (1/4 cup), cinnamon and vanilla extract. You can also add macha, chocolate chips, or some other dried berries. The main ingredients are bananas and oats. Everything else can be replaced. This recipe makes 8 mini doughnuts.
Let´s start with adding dried berries into the (mini) food processor with sliced frozen bananas, cinnamon and vanilla extract and pulse until it´s smooth and creamy.
It should make about 2 cups of mixture. Now transfer it into stand mixer, add oats and almond flour. Mix until thoroughly combined.
Transfer into whatever bake wear desired. You can make muffins, doughnuts or just cake size. I´ve done it all, it tastes the same just the presentation is different. I have started to like to use the doughnut pan.
Bake 15-20 minutes or until it starts browning.
This was my first try, I just used a square baking pan.
And this is from today´s batch! I´m set for 4 days.
