I haven´t posted anything for a long time because my gluten free, egg free baking has not been very successful. Most of the cakes have just gone directly to garbage! I just can´t seem to get it right. Plus, the cold weather outside has made me slow and lazy. I’ve had no desire to cook or bake, AND we started a savings month so all the dinners have been super easy, super cheap. Main ingredients carrots and potato 😉 I mean still tasty but I just haven´t taken pictures as much as usual.
Last night I came home from work and I was so lazy and tired, but I had to make something for dinner. I cut up some leftover pork, a zucchini, boiled some rice spaghetti (gluten free) and whipped up an easy alfredo sauce (garlic, milk, butter, Parmesan) and now everything with pictures.
Ingredients
150 g pork
1 zucchini
rice pasta for two
2 tablespoon butter
2 teaspoon garlic
2 cups 2 % milk
2 teaspoon potato starch
1 1/2 cup Parmesan
pinch of black pepper
Cut pork cubes or strips, I cut strips but whatever you like. Also wash zucchini, slice and cut into quarters.
Fry pork with butter in high temperature for 5 minutes, then turn down to medium for about 10 minutes, add zucchini and at medium, fry for 5 more minutes. Set aside.
Boil your spaghetti.
Make alfredo sauce. In a medium sauce pan, add 2 tablespoons of butter and garlic. Fry for a few minutes. Add a cup of milk. The other cup of milk, mix with 2 teaspoons of potato starch and then add to the mixture. Simmer on medium heat for a minute, stirring all the time, then add the Parmesan cheese and black pepper. Simmer/boil until you see bubbles and then take off from the burner, set aside.
Now it´s time to mix everything together. And that´s it. So easy.
I must say that I was super impressed with myself. It took me less than half an hour to make this and it was the best dinner in months 🙂
