Crazy red meatballs

I use my own website every day to search my own recipes, especially now as I’m converting all the recipes to gluten free, egg-free and free of things that popped up on my food intolerance test.

I love meatballs. Period. But now all of a sudden I can’t use breadcrumbs, eggs or ketchup.  These are awesome, they may look a little weird, but Rob who also loves meatballs, really loved these.


Preheat oven to 350 F

Makes 38 meatballs. Prep 15 minutes + 25-30 baking.

1 pound ground beef (ground pork or ground chicken)

50 g diced Monterey Jack cheese (or any other you like)

1 diced onion

50 g potato flakes or 1 cup mashed potatoes

3-4 tsp homemade no night shade ketchup

salt, pepper, spices

coconut oil for greasing the baking pan

Cut the cheese and onion into cubes, make mashed potatoes out of the flakes by adding hot water, read the ingredients from the box.

Put all the ingredients into a bowl and mix everything together.


Grease the baking pan. Start making the balls, using either ice cream scoop or an actual meatball scissors.


Use cold water to rinse the scissors in between the scoops so the mix won’t stick.


Put in the oven at 350 F for 25-30 minutes or until the meatballs reach an internal temperature of 165 degrees F.


Serve with rice, mashed potatoes or veggies. I really loved the colour of the meatballs, they are so crazy red 🙂
