Saturday was a very important day in baseball. The Toronto Blue Jays and the New York Yankees were playing a double header which means there are 2 games back to back, same day, 30 minutes apart. Because it is so late in the season these are very important games for both teams. My husband was watching the games like it is the most important thing this year and since I´m not that much of a fan, I was spending my time in the kitchen 🙂
Of course I know most of the men playing for Blue Jays and I would like them to win but I also like the New York Yankees because that team was in one of my favourite movie ever – Anger Management, with Jack Nicholson and Adam Sandler. If you haven´t seen it, you should. I can honestly say I have watched it like 50 times 🙂 It is so funny, it is kind of an anger management itself 🙂 The ending to the movie catches you off guard for sure. You´ll never see it coming. Anyways, I decided to make stuffed zucchini. I love it. One of my favourite foods.
This recipe is for 2 people. I don´t really love leftover meals so I try to just make it for 1 time and there is only 2 of us.
It will take about an hour to make including preparation time.
Preheat the oven 375 F.
You will need:
1 box fresh mushrooms
250 g ground pork
about 1/2 cup of grated cheese
about 1/4 cup of blue cheese, cubed
butter for frying
BUT FIRST pour yourself a glass of wine 🙂 I found this awesome wine a few weeks ago, VOGA Italia, pinot grigio and I have been in love ever since.
Back to cooking….wash the zucchinis, put them in the pot and boil for about 15 minutes.
While zucchinis are boiling, chop the onion and fry it with butter. When they are golden brown, add mushrooms. Fry for 10 minutes and then add ground pork, fry another 7-10 minutes. Season with salt and spices.
Drain the water from the zucchinis and when they have cooled down, cut them in half, scoop out the seeds and put them on the baking pan.
When the stuffing is ready, put in a bowl and let it cool.
Let’s start the stuffing process now. First, put some blue cheese in the bottom of the scooped zucchinis, then add the stuffing (onion, mushroom, ground pork) and top with the grated cheese.
Put it in the oven at 375 F for 30 – 35 minutes or until the cheese is golden brown.
Serve with whatever you´d like. This dish doesn’t really need anything, but I ate it with black olives.
Now, you can pour yourself another glass of wine 🙂
