Since I’ve been eating very healthy the past few weeks, I decided to make lentils with radishes. Sounded very interesting and healthy.
Lentils are full of protein and fibre, nutritious and delicious. From main dishes to appetizers to baking, lentils can fit into any diet or cuisine. Lentil colors range from yellow to red-orange to green, brown and black.
1 onion
1 carrot
10 radishes
salt
Combine cubed onion and cubed carrot and split lentils and cover with water.
Bring to boil and then simmer for 20 min, then transfer to the salad bowl and let cool for 20-30 min.
Cut radishes either slices or cubes. When lentils are cooled down add radishes and mix.
This dish turned out to be very delicious although my lentils turned into mush 🙂 To avoid that, I should of used the whole lentils but I bought the half ones by mistake.
You can eat this either warmed up or cold, it is good either way!
Lentils du Puys from the Du Puys region of France never turn to mush. The grocer in the basement at the St Lawrence Market sells them. Some Bulk Barns sell them too but they are from Alberta where soil conditions are similar to those in France. Much cheaper too.
