Lately I´m very fond of asparagus, and more specifically, asparagus and egg combo 😉 I can eat it for breakfast, I can eat it for lunch or dinner. Doesn´t matter, because it tastes absolutely fabulous.
Wikipedia says “Water makes up 93% of asparagus’s composition. Asparagus is low in calories and is very low in sodium. It is a good source of vitamin B6, calcium, magnesium and zinc, and a very good source of dietary fibre, protein, beta-carotene, vitamin C, vitamin E, vitamin K, thiamin, riboflavin, rutin, niacin, folic acid, iron, phosphorus, potassium, copper, manganese and selenium”. So sounds like I picked a good vegetable to love 😉
I have done my asparagus-egg dish so many times this past month that I can´t remember what other foods taste like 🙂 This is my excuse for not writing a blog post for so long! Anyways, this is my perfect meal right here.
SERVES: 1-2 people
PREP+COOKING TIME: 20 min max
Ingredients
Half bunch asparagus (about 16 pcs)
1/4 onion
2 eggs
1/4 cup milk
salt, spices, little bit of butter for frying
Fry the onion a little bit with butter.
Wash your asparagus and add it to the pan. Add a little bit of water to steam. Steam until the water is gone.
In a bowl scramble 2 eggs, add milk, salt, spices.
Use the fork to determine if the asparagus is half done, semi-soft. Usually in 5 – 7 minutes, when the water is all gone. If the asparagus is semi done, pour the egg mixture on top of it!
Cover with a lid, and steam till the egg is nice and fluffy. Eat with a salad or with no salad, you´re the boss!
There are really no rules to this dish. Instead of an onion, you can use garlic. Instead of asparagus you can use some other vegetables. Instead of 2 eggs you can just use one or you can use more than 2.
You can even do egg wrapped asparagus 🙂 My favourite salad option is always avocado, if not an avocado then cherry tomatoes to add colour!
If you want you can flip it and fry it from both sides….
It´s all up to you. I just know that it doesn´t matter how I make it, it still tastes super awesome!
