I had a little motivation crisis yesterday morning, I didn’t know what to bake or cook…so I turned to my cookbooks to look at beautiful motivational and colourful pictures. And then EUREKA, I knew what I wanted to make – bean salad. I had never made one before so it was so exciting to make it and then taste it. It was so good and so colourful, just like my summer will be!
Takes 10-15 minutes to make
1 can red kidney beans, drained and rinsed
1 can white kidney beans, drained and rinsed
1 can corn
2 cans flaked tuna
half a cucumber
2 cups mixed salad greens
salt
There is no art to make this salad, combine drained and rinsed beans, corn, flaked tuna, cubed or sliced cucumber, mixed salad greens. Sprinkle with a little salt. Mix.
I think this bean salad is my new favourite food! It is so delicious and very low in calories – about 195 per serving and very high in protein. The amount of protein in your diet is the single most important calorie that influences your metabolic rate, favorably influencing weight loss. Eating healthy and losing a little bit of weight is my goal right now!
