My passion for cooking has reached a whole different level. Yesterday when I was taking a nap I dreamed of a new recipe and when I got up I started making it for dinner 🙂 Isn´t that weird?
So without a longer introduction, here it is – “The dinner that I dreamed”. Sounds like a book 🙂
Dinner for 4 people or for 2 very hungry people. Makes 4 pieces of dinner cakes.
Prep 20 minutes + 30 min baking time
Preheat oven to 400 F
2 quarter size bunches of spaghetti
1 small onion
1 boneless/skinless chicken breast
4 big or 12 smaller broccoli florets
half a can corn (optional)
4 eggs,
1/3 cup 10 % milk
2,5 tablespoon flour
spices, salt
Boil spaghetti until al dente, drain and rinse with cold water. Set aside.
Cut onion into little pieces, fry with butter for few minutes in medium. Add cubed chicken and fry in medium temperature about 10 minutes until you don´t see raw flesh any more. Add your desired spices. Set aside.
Whip your eggs until a little foamy, add salt, milk and flour. Mix till thoroughly combined.
Start assembling your little dinner cakes. I used bigger cake tins, from Cake Boss. They are double as size as usual muffin tins. Set broccoli florets in the middle, as much as you can fit there. Wrap the spaghetti around it.
Then fill it with chicken and onion mix. Finally pour the egg mixture on top of all 4 tins.
I also added corn on top, to add a little different flavor. I think it went very nice on top there. I love corn, if I can I always add corn 🙂
Let cool for 5 minutes and then using a plate, pour them out of the tins. They came out very easy.
You can serve them which way you want, face up or face down, I served it like an ant hill, I think it looked cute 😉 But if you wanna see how it looked the other way, I´ll add a picture.
I absolutely loved it! Rob wasn´t entirely happy with it, he said he would of added tomato to it and more spices. I didn´t agree with him but then again it was my dream and I already knew how it was going to taste and how I wanted it to taste! I will call it a success! 😉
