The calendar says its spring, but when you go outside you still need to wear a lot of layers, at least here in Toronto, Canada! I dream of warm weather. I dream of sunshine. I dream of wearing dresses. I dream of picnics 🙂
First of all, I wanted to submit this post to Gastropost, for the “Bitter mission” but then I realized that lime is not bitter, it is sour 🙂 I mean it does taste a little bitter to me but “the big important” internet says it is more sour, so I had to find a plan B for my submission 😉 More on that another day…
This is a very springy cake. I was hoping it would of been greener, it didn´t turn out as green as I wanted, but it was still super tasty, a little sour but still sweet! And not at all bitter 🙂 Avocado – lime cake
Makes one loaf
Takes 20 minutes for prepping and an hour for baking
1 3/4 cup flour
2 tsp baking powder
1 tsp baking soda
1/2 tsp salt
3/4 cup sugar
1 1/2 tsp lime zest
1/4 cup + half 1/4 cup oil
120 ml coconut milk
1 avocado
2 tbsp lime juice
Icing
1 cup powdered sugar
1 tbsp coconut milk
3 tbsp lime juice
lime and sliced almonds for decorating
Preheat oven 350 F.
Grease the standard loaf pan and sprinkle a little flour inside, to the bottom and to the sides.
Puree avocado, using hand mixer or a fork. I used the fork because it looked easier 🙂
Mix flour, baking powder, baking soda and salt.
Combine sugar, lime zest and coconut milk until thoroughly combined and then add to the mixture.
Finally add the pureed avocado and lime juice.
Put the dough into prepared baking dish and bake 50-60 minutes or until a toothpick inserted into the center of the cake comes out clean. It took me 60 minutes. Let cool for 10 minutes and then just tip it out from the pan, flour that you put in there earlier makes it very easy to get it out.
While the cake is in the oven, prepare the icing. This cake is good even without icing so it’s up to you if you wish to make it.
Mix powdered sugar, coconut milk and lime juice together and that’s it! Can’t get any easier than that 🙂
When the cake is cooled down use a spoon for the icing or just pour it over the cake.
You can store it in the fridge for a few days. It will be still fresh!
