So here I was in bed again with the fever. I actually managed to sleep half a day but then I could not any more. I wanted to do something but I didn’t know what it was, until I saw a jar of rolled oats in the pantry and I said “I’m gonna make mini banana muffins”. I didn’t know it yet but I would also be using mini marshmallows. A few minutes later, when I gathered all the baking supplies, I saw them and so it was decided!
I didn’t have any fresh bananas so I had to use the ones from the freezer. For this recipe, I would actually want to use fresh bananas, but that did not stop me!
oh and PS! I’m literally eating the muffins right now and I’m so addicted to them. I can not stop 🙂 I’m so proud of these!
Prep and Cook Time: 10 minutes + 20 min
Makes: 24 mini muffins
2 tablespoons butter
1 ½ cup rolled oats
1/2 cup flour
1/4 cup ground almond
1/4 cup white sugar
1/2 teaspoon baking powder
1/2 tsp cinnamon, 1/2 tsp salt
2 bananas, one mashed, one sliced *sliced one is for decorating
1/2 cup (120 ml) milk
1/2 cup chocolate chips
about 36 pcs marshmallows Preheat oven to 350F.
Melt the butter and set aside. Mix the oats, flour, ground almond, sugar, baking powder, salt and cinnamon.
Add the melted butter to the dry mixture along with mashed banana and milk. Mix until just combined. Finally mix in the chocolate chips.
Fill a greased mini muffin tins with batter. Add the banana pieces on top for one half and the other half use 3 marshmallows on top.
Never would have thought of adding marshmallows to Banana Oatmeal muffins. Genius!
