Cauliflower chowder with corn and carrots

Last week has been a real start for spring training, I have done a little bit of exercise almost every day. My favourite of course is badminton 🙂 I am determined to shape up for summer, like I have promised myself every spring 😉 I do have to mention that this year I´m more serious about it! Do you feel the pressure in the spring to work out?

According to Canadian Living cauliflower is the “trend food for 2015” I wanted to do something with it and I found a “trendy food recipe” – Cauliflower corn chowder, I just added carrots to it and didn´t really follow the instructions because that´s me, I don´t like to take orders 🙂

IMG_0190Prep time: 10 minutes + 20 for cooking

SERVES: 3 people


2 tbsp butter for frying/steaming

1 onion, diced

2 cloves garlic, minced or 1 tbsp of pre-chopped garlic from the jar

1 tbsp thyme powder

1 can corn

4 big cauliflower florets

2 medium carrots, cut into cubes

2 cups (500 ml) chicken or vegetable broth

1/2 tsp salt

1/4 tsp pepper

1/2 tsp parsley flakes

1 cup (250 ml) milk

2 tbsp flour

IMG_0167Fry chopped onion with butter, for about 3-4 minutes on medium heat, until crystallized, add garlic, carrots and cauliflower. Add 1/3 cup of water, let steam until they are semi soft! Add thyme.

IMG_0172When semi-soft, take it from the stove and add the chicken broth and puree the mix.

IMG_0176 When done, put it back on the stove on medium heat. Mix flour with milk until thoroughly combined and add to the puree mix. Add salt, pepper, parsley flakes and corn.

IMG_0180IMG_0187Simmer for another 8-10 minutes and it´s done.

After taking the first bite Rob said “WOW!!!” so that was a very good sign 🙂 I loved it too! It´s a great recipe. I have only ever done a salmon chowder before.
