I bought this awesome silicone muffin mold from the Christmas market, it was just too cute! Owls have been a theme at our house lately 🙂
Makes 10 cute owls (mini cakes)
1 2/3 cup all purpose flour
1 tablespoon matcha powder
3 tsp cocoa powder
5 tablespoon sugar
2 teaspoon baking powder
1 tsp flax seeds
1 teaspoon salt
1/2 cup orange juice
3 bananas mashed up * I used frozen bananas
1/4 teaspoon vanilla
1 egg
This time I kinda put everything in at once. I added the wet stuff first and then added the dry ingredients.
I put the frozen bananas in a bowl and let them thaw a little bit. Then added an egg, orange juice, vanilla extract, salt and sugar. Mixed it for a minute in my Kitchenaid.
When the banana mixture looked good I added flour mixed with baking powder, matcha, flax seeds and cocoa powder. Mixed at medium speed for 2-3 minutes.
Final step. I sprayed the molds with oil and added 2 tablespoonfuls into the owls. It’s about 3/4 of an owl 🙂
Bake for 350 F for 25-30 minutes or until a toothpick inserted into center comes out clean.
These came out so cute. They’re a little spongy and you can really taste the banana. If you have kids, they will love them too!
They are not overly calorie rich, it contains bananas and flax seeds, so you can say they are pretty healthy 🙂
