When I think about spaghetti, it´s always spaghetti and meatballs with tomato sauce. Right? When growing up I never ate anything fancy at home, did you? It was always very simple and quick home cooked meals which I still like and that´s what this blog is all about – simple home cooked meals. Except for when I´m in an experimental mood 🙂
I don´t know if I´ll call it experimental but I really wanted to eat spaghetti the other day, BUT I only had Swiss chard and asparagus in my fridge. This is how spaghetti with greens was born in my kitchen, because I was too lazy to go to the store 😉 I have never been a “finger in the cookbook” kinda girl so a lot of meals are “let´s see what we can find from the fridge” 🙂
Takes about 30 minutes to make, serves 4
8 oz spaghetti (for 4)
1 onion
1/2 bunch Swiss chard
1,5 tsp grated garlic
1/4 cup Parmesan cheese
1 bunch asparagus
1 big can diced tomatoes
1 tsp dried basil
oil and butter, for frying
salt
cheese for topping, optional
1. Wash your asparagus and Swiss chard. Cut the ends off from asparagus and then cut them in half. Cut the chard into small/medium pieces.
2. Fry/saute the Swiss chard on medium heat with onions and garlic, about 7-10 minutes and then top it off with Parmesan. Set aside.
3. Steam the asparagus with butter and 1/4 cup water until the water disappears. Add a little bit of salt. Set aside.
4. Boil your spaghetti (salt, optional). When done, drain the water and add a can of diced tomatoes. Add basil, asparagus and Swiss chard. Mix. Add salt if necessary.
Set on a medium heat for another 5 minutes.
So I mean it´s very easy! I think 30 minutes is the right amount of time you would want to spend after work to cook and then just relax the rest of the night!
