I haven’t posted much lately because I haven’t been feeling well, I’ve had a fever for a week. And this Saturday I had a mechanical bull riding accident, I fell off and landed badly. Anyways, the trip to the emergency showed that nothing is broken, just a sprained ankle. I’ll be up and running very soon 😉
This is my new favourite dinner which I wanted to share last week but I needed my rest. Very tasty, very healthy.
2-3 cloves of garlic
2 cups packed finely chopped chard
1/2 cup bread crumbs
1/2 cup mozzarella cheese
2 green onions, sliced
1 tbsp mustard
oil for frying
Add chopped chard, I used hand blender to shred it. Fry over low heat for 10 minutes.
Serve with your favourite salad.
Last night we didn’t have any mozzarella cheese so I used blue cheese instead and it turned out awesome as well.
