Potato and chard cake

I haven’t posted much lately because I haven’t been feeling well, I’ve had a fever for a week. And this Saturday I had a mechanical bull riding accident, I fell off and landed badly. Anyways, the trip to the emergency showed that nothing is broken, just a sprained ankle. I’ll be up and running very soon 😉

This is my new favourite dinner which I wanted to share last week but I needed my rest. Very tasty, very healthy.

valmis3 big potatoes ( 675 g)

2-3 cloves of garlic

2 cups packed finely chopped chard

1/2 cup bread crumbs

1/2 cup mozzarella cheese

1 egg

2 green onions, sliced

1 tbsp mustard

salt, pepper

oil for frying

esimeneBoil potatoes till soft, cut into little pieces and put the them into the frying pan.

Add chopped chard, I used hand blender to shred it. Fry over low heat for 10 minutes.

teineTransfer everything to a bowl, mash potatoes if there are still chunks. Stir in bread crumbs, cheese, egg, green onion, mustard, salt and pepper.

kolmasUsing a table spoon and your hands, form medium round patties. Cook turning once, until crisp and golden, about 6 minutes each side.

neljasviiesI kept the finished cakes warm in the oven until they were all ready.

Serve with your favourite salad.

Last night we didn’t have any mozzarella cheese so I used blue cheese instead and it turned out awesome as well.
