Butter-scotchies

These cookies have a very fun name and they taste awesome as well. We finished these cookies so fast that I think I should go on a diet now 😀 They have the most amazing after taste a cookie could have, coffee-ish taste if that makes any sense 🙂  edit-5Yield: 8-9 dozen cookies

*I only used half of the amounts so I got 27 cookies

Preheat oven to 350 F degrees

Butter-scotchies

 

1 cup butter  ( 2 sticks)

1 cup brown sugar

1 cup white sugar

2 eggs, beaten

1 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

1 teaspoon vanilla extract

2 cups flour

2 cups butterscotch chips * or you can mix it up half/half with other chocolate chips

1 1/2 cups rolled oats

edit-2Melt the butter, add the sugars and let it cool a bit. Then add eggs, baking powder, baking soda, salt and mix in thoroughly. Let it sit for 10 minutes to let the butter to solidify.

You can either drop this dough by rounded teaspoon onto a greased cookie sheet, 12 to a sheet or roll the dough balls with your hands, pushing them down a bit so they won’t roll off on their way to the oven.

edit-3Bake at 350 F for 12-15 minutes. Mine where in the oven for 18 min since I made them a bit bigger.

edit-4These cookies freeze well if you roll them in foil and put them in a freezer bag. Since we finished them super fast there was nothing left to put in the freezer 🙂
