Happy Earth Hour

As promised in a previous blog entry, here is an awesome recipe with the pressed cottage cheese. This is by far the most popular cake in Estonia and I have had it a lot. I love it! I was pretty sad when I moved here (Toronto, Canada) and grocery stores did not sell it, I just recently found a place where to buy it. One of the happiest days of my life 🙂

kohupiimakook-valmisPreheat oven to 400 F

Crust

100 g butter

3/4 cup flour

3 tbsp sugar

1 egg

Mix room temperature butter with sugar. Add an egg. Mix well. Add flour. When the batter is nice and smooth, transfer it into desired baking pan (I used 8×8 inch pan, 2 inch deep) and spread it.

kohupiimakook-1I put a wax paper on the bottom of a baking pan, easier to just pull it out later. It is easier to spread it when you make the spoon little bit wet with cold water.

1/2 kg pressed cottage cheese

* I´m sure you can use also cream cheese or drained cottage cheese but I have never used it to make this cake. If you are curious about this cake I suggest you buy the right pressed cottage cheese. Check my last blog entry for the picture.

3 eggs

1/2 sugar

*If you love your cake extra sweet, make it a 1 cup

4  tbsp sour cream

3 tablespoons of flour

2 tsp vanilla extract

drop of lemon juice

If you love raisins, add a cup of raisins

*I’m not a fan so I didn’t

For the topping add the cottage cheese, sugar, eggs, sour cram, vanilla extract and lemon juice into a standard mixer bowl and mix until well combined. Add flour. Mix well. And raisins if you love them.

Bake for 45-50 minutes or until top is set and browned. When cool, cut into squares.

You may add icing sugar on top to add a special effect to it!

  1. I think this sounds delicious! I wish I could get pressed cottage cheese to give it a go. It’s comical and so coincidental that you said about lights out… our apartment loud speakers broadcasted a special message about participation. Of course I was clueless.. now I know.

    • That’s funny about the lights and I kinda wanted to publish it 8.30pm to remind people. I’m so happy it worked 😉 I posted the last picture after the Earth Hour since I ran out of time before 🙂 It’s a wonderful tradition! And yes it is a very delicious cake! When you come to Toronto, I will make it for you! So here – an invitation 😉
