What do you make when you have no time but still want to make something sweet? Something that is yummy and takes almost no time to prep?
For me – corn muffins, but this time with a twist! I used pear puree.Corn muffins with pear
Ready in 30 minutes!
Preheat oven to 400 degrees F
1 cup cornmeal
1 cup all purpose flour
1/3 cup white sugar
2 teaspoons baking powder
1/2 teaspoon salt
1 egg beaten
1/4 cup canola oil
1/2 cup pureed pears *I used Magic Bullet to puree 2 canned pears
3/4 cup milk
In a stand mixer bowl mix together cornmeal, milk, egg, oil and pear puree. Mix in a medium speed for few minutes. Then add flour, sugar, baking powder and salt.
If you want to make 2 different colours, like I wanted to for St Patty´s Day, divide the batter into two separate bowls and add desired colour to it. I wanted to add green but unfortunately I only had neon green 🙂 So I had to use the neon!
Spoon batter into muffin cups, you can do one colour on top, the other one in the bottom or however you like, I did random patterns 🙂
Bake at 400 degrees F for 15 to 20 minutes. I went with 20 minutes since my muffin cups were a bit bigger than usual.
They turned out very cute, not very St Patrick´s Day green but that was all I could manage 🙂 They tasted very nice and next time I might even add more pear and maybe not even totally puree it. And a lot of other colourful fruits and berries since I couldn´t do it this time since I wanted the green colour to be visible 😉
