Seeing as New Years Eve is extra special for Maiu and I (our anniversary), I thought I’d make something extra special for my incredible wife. As an appetizer, I made garlic shrimp. I pan fried them in garlic and butter. Nothing crazy here, simply fry the shrimp on medium for a few minutes until they curl up into a tight little ball. It does not take long to cook at all. I’ve done this a million times. So simple yet so delicious. Maiu gave me a 10 out of 10 for this. YAY! Sorry, no pictures of this. They disappeared too fast.
Next, for the main event, I thought I’d try my hand at something I’ve never done. Lobster tails. Turns out that it was so much easier than I ever expected. The hard part was finding the lobster tails. Next time, I will be sure to buy them fresh, not frozen. Honestly, ours turned out amazing, but I’m sure they would be even better if they did not start out frozen.
First, thaw the tails in the refrigerator for 24 hours. When you’re ready to get cooking, rinse them under cold water for a few minutes to give them a good shower. Get yourself a good, sharp pair of kitchen shears. You’ll need these to cut the tails along the top side. Cut down the middle, all the way until you reach the end of the last link (sorry, don’t know the actual term). Just before the fins on the end.
Now that you’ve got the shell split. You’ll need to pull this apart just enough so that you can reach inside the pull the meat out. You need to be careful here that you don’t cut your hands on the shell. What we’re doing here is pulling out the meat so that it lays on top of the shell (see final product for reference image at the top of this page). DO NOT PULL OUT ALL OF THE MEAT. The meat still needs to be attached at the end of the tail.
Once you’ve got the meat laying on top of the shell, you can season it any way you like. I put a few pieces of butter down the middle, added a bit of fresh garlic, a pinch of salt/pepper, and a dash of Kartulimaitseaine (Estonian spice).
I baked this in the oven for about 20 minutes at 375F, and then a few minutes under broil. As you can see by our leftovers, or actually lack of leftovers, I did pretty good. HAPPY NEW YEAR’S!!!
