Not sure what dessert to make for tonight? Here is a recipe that your guests will love, nice fluffy, yummy cookies that taste like shortbread cookies. Ready in half an hour!1 cup salted butter (2 sticks)
1 cup white sugar
1 teaspoon vinegar (recipe calls for raspberry vinegar but I used apple vinegar)
1 tsp baking soda
1 tsp rum extract (or any other)
1 and 1/2 cups all purpose flour
1 cup of chopped walnuts (or any other, original recipe called for pecans)
So as you see I have customized this recipe a little bit, I didn´t have raspberry vinegar or pecans.
Combine softened butter and the sugar. Mix them until fluffy. I used my stand mixer. Add the vinegar, whatever you have, and mix it in.Add the baking soda and mix that in. Then rum extract and add the flour. Mix thoroughly.
Mix in the pecans or walnuts. Whatever you prefer.
Drop by spoonfuls on a greased baking sheet, 12 cookies mounds to a sheet.Bake at 325 degrees for 20 minutes or until slightly golden on top.Store these cookies in a cookie jar or air tight container. Makes about 36 cookies depending on size.
