These were my very first cookies that I baked in Canada. I´m not a big fan of rolled up cookies aka sugar cookies because the rolling pin is just not working well in my hands, it doesn’t like my dough 🙂 For years 🙂
With this recipe there is no rolling needed. I guess that is why I was so crazy about Hannah Swensen recipes, that’s why I continued and I loved to bake cookies now!!! I have woken up at 7am in the morning and started baking cookies. Crazy 🙂 Right 🙂 That´s how good these books are!!! VERY Inspiring! Pineapple delights:
2 cups of butter
2 cups brown sugar
2 cups white sugar
4 eggs – beaten
1 tsp baking powder
1 tsp baking soda
1 tsp salt
2 tsp pineapple extract (or you can use vanilla)
4 cups of flour
2, 5 cups chopped sweetened dried pineapples
1,2 cup chopped coconut flakes
3 cups of rolled oats
Melt the butter, add sugars and let it cool a bit, then add beaten eggs, baking powder, baking soda, salt, pineapple or vanilla extract and mix in the flour. Add chopped pineapple, chopped coconut, rolled oats and mix the thoroughly, the dough will be quite stiff.
Use a teaspoon to put them into baking pan. Bake 350 F for 12-15 minutes.
Maiu notes: I have to admit I cheated little bit, I did not add coconut flakes and I replaced dried pineapples with the cocktail ones. They were very tasty, I call them “the diet cookies” because of the pineapple. They are so fresh and light 🙂 And Rob´s co-workers loved them! I was happy!
