I have been so busy lately, and have not had time to type up all these Hannah Swensen recipes, but that is about to change because I will now make time for it. I will try to work my way down from the last book now, so here we go, next recipe is from the book “Red Velvet Cupcake” by Joanne Fluke, of course!
Preheat oven to 350 degrees F.
You will need:
1/2 cup salted, softened butter
1/2 cup white sugar
1/2 tsp baking powder
1/4 tsp baking soda
1 large egg, beaten
1/3 cup frozen pink lemonade concentrate, thawed
3 drops of liquid red food colouring
1 3/4 cup all-purpose flour
Using the electric mixer, beat the softened butter with the sugar until the mixture is nice and fluffy. Mix in the baking powder and baking soda, beat until well combined.
Mix in the beaten egg and the lemonade concentrate. Add 3 drops of red food colouring.
Add the flour, a half cup at the time, beating after each addition. If the cookie dough is too sticky to work with, refrigerate it for an hour or so.
Drop the cookies by teaspoonful, 2 inches apart. Bake these pink cookies at 350 degrees for 10-12 min or until the edges are golden brown.
They were very good cookies, they had this softness to them and they were very creamy 😉 And your guests will love them because they don´t look like regular cookies, nice and pink. Perfect for girls night or for kids parties 😉
