This time the Chatelaine cooking club challenge was fresh baked cookies! I love cookies the best when they are warm, right from the oven!
I did not use the recipe that the cooking club provided, I used much healthier recipe, instead of butter I used prune puree, that´s an old trick of mine. We women always wanna look good, right 😉 But also eat some sweets!
I like cookies, but the amount of butter in the dough does not make it that much appealing.
Butter free chocolate chip cookies (12 cookies)
1/4 cup white sugar
1/8 cup brown sugar
1/8 cup Prune puree/sauce
1/2 teaspoon vanilla extract
1 egg white
1/2 cup all purpose flour
1/4 tsp baking soda
1/8 tsp salt
1/4 cup dark chocolate chips
Preheat oven to 375 F.
Sift together flour, baking soda and salt, set aside. Add together white sugar, brown sugar, prune puree, vanilla extract and egg white until smooth. Then add in the flour, baking soda and salt mix. Stir in the chocolate chips last.
Drop 12 cookies onto greased cookie sheet. Bake 8-10 minutes till golden brown.
Twelve cookies is just about the right amount for the 2 of us! I always calculate either 1/2 or 1/4 of a recipe, that takes some time. Because you always want to eat fresh cookies, right! And we are not fast cookie eaters, even 12 cookies takes us 3-4 days 🙂 BUT I ate more of these cookies than usual because there was no butter in there! 🙂
